The beetle is a dor beetle, one of the Geotrupidae. Possibly a Geotrupes sp but there are many of these on the Iberian penininsula. Good luck!

I'm afraid I know nothing about grasshoppers and crickets in Iberia, although these do look quite similar to some British species.
The cricket looks quite like our Speckled Bush-crickets, although certainly not identical. Maybe another species in the Leptophyes genus?
I'd say the first grasshopper looks very like the Meadow Grasshopper, although again there could be more species in Iberia.
The 3rd looks quite like a Field Grasshopper, although, as with the other species, there are probably lots more similar species found in that area.
I'm afraid I can't be more helpful, it would be great to see a good book or website on the grasshoppers and crickets of Europe, but I haven't seen anything really helpful yet.
