When I went to Spain I stayed in the province of Soria(i think its a province, otherwise its definetely a city). Its north of madrid, up in the mountains. I'm pretty sure that the North of Spain is generally very good for insects, I didn't have to look very hard to find some very interesting butterflies and other insects. I'm sure that wherever you go there will be some great insects.
