Yes, it sounds like you were very lucky seeing so many things and managing to get out out unscathed with all those Highland Cattle!
How nice to see a fairy ring. I've never seen one yet but then I have only just taken in interest in fungi so will endeavour to look for one as well!
I'm glad all the animals and plants are doing so well now, I would never have realised the decline would occur from something such as overgrown grass and bushes but it all make sense now.
