I'm travelling down to the Camargue by plane in July, not very environmentally friendly unfortunately but I suppose it's better than flying to Florida like I was going to. Paul, I recently bought a guide to birdwatching in Southern France and the Atlantic coast should be pretty spectacular at that time of year with thousands of ducks and waders flying in at high tide, although I doubt there are many insects around at that time in France.
When I travelled through Northern Spain the scenery was very impressive, mainly the mountains and so far that's been the best 'wildlife' holiday I've ever been on.
